| Asparagus with orange
sauce |
Ingredients:
- 2 to 3 pounds fresh asparagus
- 3 Tbsp. butter
- 2 Tbsp. honey
- 2 Tbsp. frozen orange juice concentrate
Method
- Wash asparagus thoroughly. Snap off the bottom of the stalks where
they break away easily from the top. Tie the asparagus in a bunch (or
two bunches if it's easier) with string.
- Stand asparagus up in a deep pan. Add about 1" to 2" of
water. Bring to the boil. Reduce heat, cover and simmer asparagus for
8 minutes or until tender. Drain well.
- In a small saucepan, melt butter. Add honey and orange juice concentrate
and stir until well combined and hot. Toss asparagus ith sauce to coat.
Arrange on serving platter, garnish with orange slices and serve.
